Make a hearty, healthy, transportable chocolate chip granola. The protein & fiber in the whole-grain oats fills you up, the nuts produce a satisfying crunch & the dark chocolate chips make the granola taste like a chocolate chip cookie. In case you don't like coconut, you can definitely leave it out, but you certainly won't notice the taste or texture when everything is mixed together.To make your own chocolate chip granola, merge four c. rolled oats, one c. shredded coconut, 1/2 c. seeds (sunflower, flax or sesame), one c. semisweet ordark chocolate chips, one c. roughly chopped pecans or almonds, 1/2 c. brown sugar, ¼ c. honey, ¾ c. unsweetened applesauce, one tbsp. olive oil, one tsp. vanilla & one tsp. salt in a bowl. Spread mixture onto greased cookie sheets & bake at 350 for twenty minutes. Stir & bake for another 15-20 minutes. Granola hardens as it cools.
Blend a 12-ounce package of silken tofu in a food processor or blender until smooth. In a double boiler, melt ten ounces of chocolate chips or nice dark chocolate with a tablespoon or of water over low heat. Stir constantly & add four tbsp. Grade A or Grade B maple syrup. Add chocolate mixture to the tofu & blend or method the mixture until creamy. Serve in individual
